Feed Your Face: Mango Salsa Recipe

I spend all week in my office, so on the weekends, I try to spend as much time as possible outside (in the shade, of course!). One of my favorite summer recipes is this mango salsa from my sister Tina, who recently made it for a family barbecue. She was inspired to create it by reading Feed Your Face, and it’s become her (and now my) go-to salsa recipe. Mangoes are rich in vitamin C, which is essential for building strong collagen, and tomatoes contain lots of lycopene and other antioxidants, which have been shown to help protect against sunburn and sun damage. This salsa is sweet and tangy, and it's a great option if you or any of your guests are sensitive to spicy foods or don’t care for chilies. Serve it with grilled fish (my favorite), over chicken, or as a dip.

Tina’s Mango Salsa: Serves 4

Combine in a bowl:

2 cups plum or roma tomatoes, seeded and diced
*1 1/2 cups ripe mango, diced
1/4 cup diced onion
2 tablespoons fresh lime juice
1 tablespoon cider vinegar
1/2 cup chopped fresh cilantro

Stir in:

1 teaspoon salt
1 teaspoon of freshly ground black pepper
1 clove garlic, minced

*Some mango salsa recipes call for sugar, but as long as your mangoes are ripe and sweet, you can skip the sugar — better for your skin and your waistline!
