My Favorite Grilled Garlic Chicken

My family is originally from Taiwan (like Jeremy Lin and Jason Wu), so we like garlic with everything. Aside from being tasty, garlic contains several different antioxidants including compounds that have been shown to inhibit the growth of basal cell carcinoma and melanoma cells. Garlic extract has also been shown to speed wound healing, as well as lower blood pressure.

The next time you grill, try this recipe from my brother-in-law, Steve, whose garlicky chicken is the most delicious I’ve ever tasted:


Steve’s Grilled Garlic Chicken

Put 10-12 thighs and drumsticks in a gallon Ziploc bag. Whisk together and add to bag:

3 tbsp olive oil
1 tbsp lemon juice
1 ½ tsp salt
½ tsp pepper
8-9 minced garlic cloves (about 3 tbsp)
2 tbsp water

Refrigerate for 30 minutes, flipping bag over after 15 minutes.

Grill chicken as desired (you can also bake). Before serving, whisk together and drizzle over the grilled chicken:

1 tbsp honey mustard
1 tbsp lemon juice
3 tbsp olive oil
1 tbsp fresh parsley (or one tsp dried)

¼ tsp salt
¼ tsp pepper
