Feed Your Face: Summer Greek Salad

A great big thank-you to all who sent in your favorite healthy summer recipes, and congratulations to Julia, who won the drawing for a signed copy of Feed Your Face! Julia’s recipe for a summer salad contains my number one summer food -- tomatoes -- which have been shown to help fight sunburn and sun damage. Dressing the salad with olive oil helps your body absorb lycopene, the powerful antioxidant found in tomatoes and other red fruits and veggies, like radishes and peppers. Serve this on the side with whatever you’re grilling this summer:

Julia’s Summer Greek Salad

Serves 4

Toss lightly with beautiful thoughts:

2 cups grape tomatoes (cut in half)
1/2 cup chopped basil
1 English cucumber (slices cut in quarters)
1 cup feta cheese (crumbled)
1/2 cup kalamata olives

Season to taste with:

Olive oil (just enough to combine flavors)
Cider vinegar to taste
Mixed Italian herb seasoning to taste
Spike (no salt) seasoning (my can’t live without seasoning; you may use salt instead, to taste)
Pepper to taste

Serve on a bed of butter lettuce.
